What's Cookin Wednesday
What's Cookin Wednesday...April 28
(Co-Host Jen Grier...Guest Chef HomeTown Hottie Ashlee Painchaud)


Ingredients:
* 2 pounds beef shoulder roast
* Salt and pepper, to taste
* 2 onions, peeled and sliced
* 1 medium garlic bulb, cloves removed and peeled
* 8 ounces of chilies
* 1 tablespoon cumin
* 1 tablespoons salt

We have a couple of other ingredients that have been pre-prepared and we'll introduce later.


COOK BEEF
1. Season the beef shoulder all over with salt and pepper then brown in a large heavy pot over medium heat. Once browned on all sides, add enough water to cover the roast along with the 1 sliced onion and about 6 cloves of garlic.
2. Cook until the meat is fork tender and comes apart with no resistance, about 2 hours. When done,hand shred the meat and set aside.

PREPARE SAUCE
1. Cook the chilies in a large stockpot and cover with water. Add the cumin, remaining sliced onion and garlic.
2. Boil the Chilies for 20 minutes until they're soft then put them in the blender.
4. Add the shredded beef to the bowl of chili sauce, and mix thoroughly. Refrigerate until ready to use.

Now take the pre-prepared corn husks...spread them out and spread the pre-prepared masa dough thinly but evenly over them.
Then add a couple of tablespoons of the beef and chili sauce on top of the masa dough on the corn husks...roll them up and fold the narrow end up to the center then roll up like a jelly roll.
The large end will be open and the small end sealed (folded up).

COOK
1. Place them in a steamer and cook for 2 hours. Check every 20 minutes. Do not let the water boil away. They will be cooked when it separates easily from the corn husk.

Canada in the last three months. They are visiting schools with
German programs. On Monday afternoon Florian and Eva arrived from
Jasper to visit with 50 John McInnis German students. On Tuesday
morning (TODAY), they will be at Duchess Park. They are promoting
Germany, German, and the German culture. The Mercedes-Benz
'Deutschmobil' will be around town until tomorrow afternoon, before
heading for Kamloops. Stop the van, in order to take a picture of it
